Mazafati Dates (Kimia)

Mazafati Dates (Kimia)
Mazafati, also known as Kimia, is one of Iran’s most famous and sought-after
fresh date varieties. Native to the warm, fertile regions of southern Iran, it is
celebrated worldwide for its deep caramel-like sweetness, soft fleshy texture,
and rich, dark color. These dates are typically medium to large in size, oval
shaped, with thin skin and high natural moisture that gives them their melt-in
the-mouth feel.
The heartland of Mazafati production lies in Bam, Kerman Province, but
cultivation also extends to other prime areas such as Jiroft, Kahnuj, and regions
of Sistan & Baluchestan, Hormozgan, Khuzestan, Bushehr, and Fars provinces.
The hot days, mild winters, and rich soil in these areas create perfect growing
conditions for producing premium-quality dates that are in high demand in
global markets.
Mazafati dates are naturally rich in energy, fiber, potassium, magnesium, and
iron, while being low in fat and cholesterol-free. When eaten in moderation, they
can be enjoyed even by individuals with diabetes as part of a balanced diet. They
are also versatile in the kitchen — perfect as a fresh snack, in desserts, smoothies,
or even paired with savory dishes.

From Palm to Plate

Mazafati dates are known for their exceptional ability to retain freshness when
stored properly. At room temperature in a cool, dry environment, they can last
for several months. For the best quality, refrigeration at 0–5°C preserves their
rich flavor and texture for up to 12 months, while freezing at −5°C can extend
shelf life to as long as 24 months. This makes them ideal for both local
consumption and long-distance export without compromising quality.

The Signature Taste of Bam

Unlike dry or semi-dry date varieties, Mazafati boasts a high natural moisture
content, giving it a soft, almost creamy texture. Its flavor profile blends the
richness of caramel with a subtle honey-like sweetness, making it a delicacy both
on its own and as a premium ingredient in gourmet cooking. Every bite reflects
the centuries-old expertise of Iranian farmers who have perfected the art of
cultivating this treasured fruit.
